Vegetable and white bean stew with charred tomatoes, yoghurt and paprika oil
This gentle dish of placidly simmered vegetables is boosted by blackened tomatoes and a little spice. Although filling and comforting, itâs also light and bright, as most of the vegetables, ideally, retain a bit of bite. It sounds like a very worthy dish (and yes it is good for you) but it is also deeply tasty.
Forage in your salad crisper drawer and store cupboard for vegetables that need using up. Weigh them together, then separate into sturdy, medium, soft and leafy veg, as theyâre best cooked for different amounts of time (for guidance). Cut them into very small chunks and finely slice leafy greens, such as cabbage and kale. You can also add cooked veg into the mix at the end.
