Chicken with Wild Mushrooms and Farro

Who didn’t grow up eating a chicken and rice casserole? In many ways, this one-pot rice cooker meal might be described as a grown-up version of that classic. This time, farro, a wonderful ancient grain that has become popular, replaces the rice, and the wild mushrooms add a deep and earthy flavor.

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

8 ounces fresh mushrooms, such as porcini, cremini, or shiitake, sliced

2 cloves garlic, minced

1 teaspoon dried thyme leaves

Kosher salt and freshly ground black pepper

1 cup pearled farro, rinsed and drained (see note)

¼ cup dry white wine

1 ½ cups reduced-sodium chicken broth
