Banana Cream Pie

As I write this, we are into week 8 of lockdown due to the COVID-19 pandemic. When I started writing this book I planned to include a banana bread recipe, but honestly I think we are all sick to the back teeth of Instagram pictures of homemade banana breads, so I just couldn’t bring myself to do it. However, the problem of what to do with overripe bananas hasn’t gone away, so may I present an even better way to use them! An extra advantage is that the base of this pie is a highly satisfying way of using up old biscuits, crackers, cereal or even crisps you might have lurking at the back of the cupboard (it might sound odd, and I wouldn’t suggest any strong flavours like cheese and onion, but a bit of salty crisp is a welcome addition to the party).
