Teriyaki Seaweed Salad

MAKES 2 SERVINGS

Sea lettuce is delicious—especially in a sweet and spicy yacon dressing served atop baby bok choy.

FOR THE DRESSING

1/2 cup olive oil

1/4 cup yacon syrup

2 tablespoons coconut aminos

1 tablespoon fresh lemon juice

3 cloves garlic, peeled

1-inch piece peeled fresh ginger

1/2 teaspoon chili powder

FOR THE SALAD

11/2 cups dry sea lettuce, torn into bite-sized pieces

11/2 cups chopped baby bok choy

Black and brown sesame seeds, for garnish

To make the dressing, in a high speed blender, combine all of the ingredients and blend until smooth.

To make the salad, in a mixing bowl, toss the sea lettuce and baby bok choy with the dressing until well-coated. Refrigerate until ready to serve. Garnish with a sprinkle of black and brown sesame seeds and serve.
