1. Put the watercress, oranges, avocado, and herbs in a large salad bowl.

2. Make the dressing: Combine all the ingredients in a glass jar and shake well.

3. Pour the dressing over the salad and toss.

BASIC MASSAGED KALE SALAD

raw • 2 or 3 servings

STILL THINK YOU DON’T like kale? Or maybe you’re one of those people who is just pretending to like it to keep up with the cool kids? If either of these applies to you, you need to try massaging your kale. Massaged kale is like kale’s cooler older brother—much less bitter (almost sweet!), more tender, and much more in touch with his emotions. A real dreamboat, if you ask me.

Active time: 15 minutes

1 bunch kale

¼ cup fresh lemon juice

¼ cup cold-pressed extra-virgin olive oil

Pinch of sea salt

Small handful of hulled sunflower seeds

1 small pear, shaved into ribbons (optional)
