COCONUT JERKY

This recipe is such an indulgence for me. I absolutely love it. It’s a great snack or salad topper. My family is always munching on this.

Serves 4

What You’ll Need

5 cups coconut flakes (large, not shredded)

¼ cup Nama Shoyu

2 teaspoons apple cider vinegar

1 small clove garlic, minced

1 tablespoon shallot, minced

¼ cup maple syrup or coconut sugar

1 cup olive oil

¼ teaspoon turmeric

1½ teaspoons ground cumin

1 teaspoon cumin seeds

Method

Put coconut flakes into a bowl and set aside. In a second bowl, combine the Nama Shoyu, vinegar, garlic, shallot, maple syrup, olive oil, turmeric, cumin powder, and cumin seed. Add the sauce to the coconut meat, and let marinate for 45 minutes to an hour. Spread the coconut on the dehydrator sheets and dehydrate at 115 degrees for five hours or until crisp. This yummy snack and topping will last roughly one month when sealed and kept dry.
