UMINOM The Gin-Pom Cocktail (page 37) is a natural match for this gin-pom kinilaw. California Common beers, also known as steam beers, feature faint minty hop aromas and flavors that form a nice bridge to the mint in this dish. A light fruitiness in the beer complements the pomelo, while a bracing bitterness provides contrast to the sourness of the calamansi.

A crisp rosé wine would also be great with these shrimp.

HOW TO PEEL A POMELO

Although it looks similar to a grapefruit, a pomelo takes a bit more effort to peel due to its thick rind and pith. A tough membrane between each segment of pomelo allows the segments to keep their shape quite well after being peeled.

1. Use a sharp knife to slice off the very top of the pomelo rind.
