800g ivy gourds

100ml sunflower oil

2 medium tomatoes, chopped or blended to a smooth pulp

1 medium onion, chopped or blended to a fine paste

1½ teaspoons turmeric

1½ teaspoons salt

2–4 teaspoons ground coriander

½ teaspoon ground cumin

¼ teaspoon asafetida

½ teaspoon medium red chilli powder

1 teaspoon cumin seeds

1 teaspoon garam masala

1 teaspoon sugar

1 handful of fresh coriander, finely chopped

Masala

3–5 fresh green chillies, seeds left in

6cm root ginger, peeled and roughly chopped

pinch of salt
