WHAT’S HAPPENING?

When baking soda and vinegar combine, they exchange parts of their atoms with each other, creating a fizzing, bubbling, reaction. This exchange of atomic particles completely changes the structure of the baking soda and vinegar, and forms a new compound called sodium acetate. What’s left behind is a mixture of water and carbon dioxide gas. You can see the carbon dioxide gas as it expands and fills your balloon!
