1 teaspoon vegetable oil

100g (3½oz) pumpkin seeds

60g (2¼oz) sunflower seeds

40g (1½oz) sesame seeds

2 teaspoons tamari soy sauce

2 teaspoons maple syrup

2 teaspoons lemon juice

cayenne pepper

Preheat the oven to 130°C fan, 150°C (300°F), gas mark 2. Brush the oil over the base of a large roasting pan. Combine all the seeds in a medium bowl, then spread in a thin layer over the base of the roasting pan, and toast in the oven for 20 minutes.

Blend the remaining ingredients in a small bowl, adding cayenne pepper to taste. Drizzle this over the seeds, stir to coat and then roast for a further 30 minutes, stirring halfway through. Loosen from the base with a spatula and leave to cool. Transfer to an airtight container. They will keep well for several weeks.
