“Bacon” and Beer Cheeseburgers

PREP TIME: 10 minutes

COOK TIME: 35 minutes

SERVES 4

When I was a teenager, I loved going to Charlie’s Hamburger Joint in Houston, Texas. Those guys made the best bacon cheeseburgers around, piled high with toppings, oozing with condiments, and already falling over before you even took the first bite. You definitely needed silverware and a stack of napkins at the ready. These saucy burgers remind me of Charlie’s. You might want to have a knife and fork nearby because these burgers are messy!

2 tablespoons vegan butter

3 tablespoons all-purpose flour

½ cup mild-flavored plant-based milk (such as oat or unsweetened almond)

⅓ cup pale ale beer

1 teaspoon plus 2 tablespoons vegan Worcestershire sauce, divided

½ teaspoon creamy Dijon mustard

¼ teaspoon plus ⅛ teaspoon salt

⅛ teaspoon cayenne pepper

1 cup shredded vegan Cheddar cheese

8 slices vegan bacon

24 ounces vegan ground beef

¼ teaspoon freshly ground black pepper

4 pretzel burger buns, lightly toasted

1. Melt the butter in a medium saucepan over medium heat. Whisk in the flour; the mixture will be thick. Gradually pour in the milk, whisking constantly to incorporate. Stir in the beer, 1 teaspoon of vegan Worcestershire, the mustard, ¼ teaspoon of salt, the cayenne pepper, and the cheese. Cook for about 15 minutes, stirring frequently, until the cheese is completely melted.

2. While the sauce is cooking, cook the vegan bacon according to the package directions and set aside.

3. In a medium bowl, combine the vegan ground beef, remaining 2 tablespoons of Worcestershire, remaining ⅛ teaspoon of salt, and black pepper. Divide the mixture into four portions, then roll into balls and shape into patties.

4. Heat a large skillet or grill pan over medium-high heat. Add the burgers and cook for 4 minutes per side or until done.

5. To build the burgers, stack a patty onto each of the bottom bun slices. Top with 2 slices of bacon, smother with cheese sauce, then add a bun top and dig in!
