Satay sauce:

100 g (3½ oz) crunchy peanut butter

2 tbsp soy sauce

1 tbsp runny honey

1 tsp Sriracha

1 tbsp ginger paste

100 ml (3½ fl oz) water

squeeze of lime

Combine the spring onions, sweetcorn, courgette, chilli, soy sauce, oyster sauce, sesame oil and flour in a bowl. Add the eggs, stir to combine, then add the noodles.

Heat the oil in a 20 cm (8 in) frying pan (skillet) set over a medium-high heat. Using 1 tablespoon of the mixture at a time, cook in batches, for 2 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towels. Cover with foil to keep warm or put in an oven preheated to 180°C (350°F/Gas 4) on a baking tray lined with foil.

Meanwhile, place all the satay sauce ingredients into a small saucepan, bring to the boil then turn off the heat. Serve the fritters with the satay sauce, mint, cucumbers and lime wedges.
