Pour about ½ inch of water into a heavy, nonreactive saucepan and add the apricots. Stew the apricots over medium heat until the skins and flesh have softened, 20 to 25 minutes. (If they’re very ripe, feel free to use them raw.)
Whiz the apricots, skins and all, in a food processor, though feel free to leave the purée somewhat chunky. You should have about 2¼ cups (18 fl oz) of purée.
Transfer the puréed apricots to a bowl or measuring pitcher with a pouring spout and add the simple syrup. Stir until the mixture is well incorporated. Taste; the mixture should be sweet and slightly tart. Add the orange blossom water bit by bit—it is very strong stuff. Stop when the mixture is fragrant but before it smells like detergent.
Pour the mixture into your ice pop molds, leaving a little bit of room at the top for the mixture to expand. Insert sticks and freeze until solid, 4 to 5 hours. Unmold and transfer to plastic bags for storage or serve at once.
