I love vegetables, but some days I just don’t want another salad for dinner. This flavorful Korean-inspired dish is a great way to get your veggies and make them interesting. The term “bibimbap,” literally “mixed rice,” has come to mean a mixing together of various ingredients. I use quinoa rather than rice for a lower-calorie and -carb version, but feel free to use rice if you’d prefer.
