In my winter cold frames, tatsoi is a cold-season superstar, shrugging off frigid temperatures and giving us an ample harvest of crunchy leaves from November through March. I love to add the raw leaves to mixed greens salads, but the young, whole plants are also tasty when lightly stir-fried with other vegetables and aromatics like ginger and garlic.

Tatsoi is a nonheading member of the mustard family that forms low-growing rosettes of deep green, spoon-shaped leaves. The texture of the leaf is similar to that of spinach, but the flavor carries a hint of mustard. It’s still considered mild on the flavor spectrum, however, which is why it’s such a popular ingredient in bagged baby greens.
