MANGO–PASSION FRUIT TROPICAL DELIGHT

When the weather turns cold and the days feel shorter, and you find yourself thinking wistfully of those sun-soaked easy days at the beach—make this Tropical Delight and treat yourself to a delicious mini holiday.

SERVES 2

1 (14-ounce/400-ml) can full-fat coconut milk (refrigerated overnight)

1 frozen banana

1 cup (240 ml) frozen mango

½ teaspoon vanilla extract

1 to 2 tablespoons coconut syrup or other sweetener

3 passion fruits

Chocolate Cookie Cups, for serving, optional

Open the coconut milk can and scoop out the thick white cream into a blender. Add the banana, mango, vanilla, and coconut syrup and blend until smooth, scraping down the sides of the blender as necessary. Taste and add more sweetener, if desired. Reserving 1 passion fruit for decorating, scoop the pulp of 2 passion fruits into the blender and stir the mixture with a spoon. Serve in Chocolate Cookie Cups or regular bowls, top with the pulp from the reserved passion fruit, and enjoy!
