Put the ricotta, lemon zest, pine nuts, honey, sugar, cinnamon, and flour in a 7 fl oz (200 ml) microwave-safe mug and beat together. Add the egg and beat together until well mixed.

Microwave on full power for 1½ minutes or until a toothpick inserted into the center comes out clean. Decorate with the extra pine nuts and serve drizzled with extra honey.

Vegan Chai Tea Cake

SERVES 1 • PREPARATION TIME 3 MINUTES • COOKING TIME 2 MINUTES

1 chai teabag

5 tablespoons boiling water

4 tablespoons mixed dried fruit

2 dried figs, sliced

¼ teaspoon ground mixed spice

4 teaspoons vegetable or canola oil

3 tablespoons self-rising whole-wheat flour

1 tablespoon turbinado sugar, plus extra to sprinkle
