1. Boil or microwave the potatoes in their skins until soft, then peel and chop each into 6 pieces.

2. Place the onion, garlic and ginger in your food processor and process until very finely chopped—almost liquid.

3. Heat the olive oil in a large nonstick saucepan (with a lid) over medium heat for a few seconds, then pour in the onion mixture. Lower the heat and cook for a few minutes, stirring almost constantly, as this mixture can burn easily.

4. Now add the spices, and stir for a few seconds. Add the tomato paste and the potatoes, and continue stirring over low heat for 1 minute.

5. Add the ground meat substitute, stirring continuously.

6. Add the raisins, peas and water. Cover and simmer gently for about 1 hour, keeping a careful eye on the curry to make sure it isn’t sticking or getting too dry. Add a little more water if needed.

7. Serve hot, sprinkled wtih chopped cilantro, along with your favorite rice, poppadoms and a vegan raita. Bon appétit!
