1 Grease a large pot with cooking spray or oil and place over medium-high heat. Add onions and sauté until they have softened and started to brown, about 4 to 5 minutes. Add garlic and sauté for an additional minute. Remove pot from heat.

2 In a small bowl, whisk together vegetable broth and cornstarch until there are no lumps.

3 Add broth mixture to the pot and return to heat. Add Salsa Verde, tomatoes, oregano, cumin and beans and bring to a low boil. Simmer for 15 to 20 minutes, or until thickened and heated through.

4 Add salt and pepper to taste and serve with desired toppings.
