SEMI PRO TIP: I find slow cooking things to be the most therapeutic thing. Put on some jams, give yourself a heavy pour of your libation of choice and take your time. Slow ânâ low. Itâs worth it in the end. You can use any leftover onions in eggs, salads, rice dishes, and pastas. Theyâre great to have on hand to give a dish a little extra love.
FISH âNâ CHIPS SANDWICH
Serves 6
My mom used to take us to this old fish and chips joint just outside of Toronto called Duckworthâs. You know the kind, at least I hope you do. Iâm talking thick-cut fries, salty buttery flakey fish, creamy coleslaw, and a side of gravy served wrapped in page 6 of the newspaper. An oily, greasy delight. Top with a strong dousing of malt vinegar and a ton of salt. (One day I will die from salt consumption. I know this. Just know I lived both happy and bloated.)
Anyways, while I was conjuring up ideas of how I wanted to present food to you lovely people, I was on the fence as to whether to do a fried chicken or fried fish sandwich. Given that I think the fried fish sandwich is the lost voice of our generation, Iâm bringing mother effing fish sticks and fish and chips back, babaaaayyyyyy.
I wanted to do a play on fish and chips but sandwich style. Instead of fries, I subbed in a potato roll. And to make up for the absence of malt-vinegar-soaked fries, I made a malt vinegar aioli!
