SAVOURY RICE

You can make this with all kinds of vegetables, so see what you have available and adjust the recipe to suit.

¼ cup long-grain rice

1 rasher of bacon, chopped

1 shallot, finely chopped, or 2 tbsp finely chopped onion

½ red pepper, deseeded and chopped

1 tbsp frozen peas

½ cup chicken stock

a pinch of smoked paprika

1 tbsp butter

freshly ground black pepper

1. Put the rice in a large bowl and pour over enough boiling water to cover generously. Stir well, then microwave for 8 minutes until soft, stirring once or twice. Alternatively, put the rice in a large mug and pour over enough boiling water to cover. Stir well, then microwave for 1½ minutes. Continue to microwave in 30-second bursts for 7 minutes, stirring and topping up with boiling water, as necessary, and being careful not to allow the liquid to boil over. Drain well.

2. Put the bacon, shallot, pepper and peas in a large mug and microwave for 30 seconds until softened.

3. Add the drained rice and stir until coated in the oil, then stir in the stock and paprika. Microwave for 1½ minutes, watching to make sure it doesn’t boil over.

4. Stir in the butter and season with pepper to taste. Leave to stand for 1 minute before serving.
