Garlic, Parsley, and Lemon

Cut the squid bodies into rings; halve the tentacles, if large. Add 3 tablespoons olive oil to a skillet over high heat. Add 2 tablespoons minced garlic, then the squid. Cook until it turns opaque, 2 minutes. Stir in ΒΌ cup chopped parsley and the zest and juice of a lemon.

Scallions and Ginger

Substitute neutral oil for the olive oil. Add 1 tablespoon minced fresh ginger along with the garlic and squid. Substitute sliced scallions and lime for the parsley and lemon. Garnish: soy sauce.
