Salt-Baked Branzino with Tarragon Tomato Cream Sauce
This is one of those dishes that most people will try at a restaurant but definitely not try at home. Donât be intimidatedâitâs not that difficult. While on a work trip to Italy, Angela ordered one and raved about it nonstop, so of course I had to try to recreate it for her at home. We could not believe just how simple, yet amazing it was, and it has since become one of those dishes we make for guests when we are really trying to impress, but not spend hours preparing a meal. It may not be as easy as making scrambled eggs or ice cubes, but this truly is a very easy dish with an impressive presentation. The salt-baked cooking method results in an absolutely spectacular fish texture and flavor, and cooking a fish in salt is so much more than flair for tableside presentations. Branzino is a great-tasting fish and cooks perfectly in a salt dome.
To top it off, this sauce elevates the entire dish to something youâd expect to eat in a fancy restaurant. This sauce is phenomenal on a variety of white fish, scallops, shrimp or even chicken!
