Pan Roasted Duck Breast with Pecan Sauce

Moist and tender duck served in a sweet, nutty pecan sauce is sure to be a dinner-party delight.

Servings: 6

Total Prep Time: 35mins

Ingredients:

6 duck breasts

Salt and black pepper

1 tbsp olive oil

Pecan Sauce:

½ cup white corn syrup

1 cup light brown sugar

¼ cup butter

1 cup pecans (halved)

Directions:

1. For the duck: Preheat the main oven to 400 degrees F.

2. Season the breasts with salt and black pepper.

3. Over moderate heat, in a large frying pan heat the olive oil.

4. Add the duck breasts to the pan, skin side facing downwards and sear for 6 minutes.

5. Turn the breasts over and transfer the pan to the oven.

6. Roast the duck breasts in the oven for between 8-10 minutes, until medium rare.

7. Remove the pan from the oven and allow the breasts to rest for between 2-3 minutes.

8. On the bias, slice each breast into ½” pieces.

9. Arrange the slices of duck in a fan shape on each of your 6 dinner plates.

10. Next, prepare the sauce. In a pan, combine the corn syrup with the brown sugar, and butter and bring to boil.

11. Continue to gently boil for 5 minutes before stirring in the pecans. Season to taste and serve over the slices of duck.
