1. In a medium saucepan, combine the oat and coconut milks and bring to a steady boil over medium heat. Add the oats and stir to combine. Cook for 5 minutes, or until the oats have softened and thickened.
2. Transfer the oatmeal to a blender (high-powered, if possible) and add the rest of the ingredients and the ½ cup oat milk. Pulse 3 to 5 times, until the seeds and nuts are slightly broken down. You want the blended oats to have a diverse texture, with a balance of crunchiness, smoothness, and chewiness.
3. Divide the oats among four bowls. If desired, top with any berries, nut/seed butter, and chocolate you’d like!
