Top and tail gooseberries; put in pan with water and the grated rind and juice of the oranges; simmer till tender; add sugar, stirring till dissolved, then boil rapidly to set.
GOOSEBERRY AND RASPBERRY JAM
450g (1lb) gooseberries; 450g (1lb) raspberries
910g (2lb) sugar
190ml (⅓ pint) water.
Top and tail gooseberries; put in pan with water, simmer till tender, then crush with wooden spoon; add raspberries, cook till soft; add sugar, stirring till dissolved, then boil fast to set.
