Jam Sorbet

Serves 6-8

Sophia Tolstoy Diary (19th Century Version)

One pound of jam rubbed through a sieve, a bottle of water, half a pound of sugar, a teaspoon of almond milk, and the juice of half a lemon. Boil water with sugar; add the jam, lemon juice and almond milk. Mix thoroughly, leave to cool down and pour out into a mould. If it’s not setting, add a little unboiled water.

Modern Version

Ingredients

1 16 oz. jar of jam

2.5 cups water

1 cup sugar

1 teaspoon almond milk

Juice of ½ a lemon
