Ingredients:

6 cups baby kale leaves

2/3 cup fresh red raspberries

½ small red onion, thinly sliced

¼ cup toasted walnut pieces

1 tsp. mustard

Salt and pepper to taste

3 TB raspberry vinegar

1/4 cup olive oil

Directions:

1. In a large bowl gently toss together the baby kale, raspberries, red onion, and walnuts.

2. In another bowl whisk together the remaining ingredients to create the dressing. Pour over the kale mixture and toss carefully to coat. Allow to sit for 10 minutes before serving.
