Souk soup
I daren’t call this harira – though really that’s what it is – because I’ve rather heretically added wine to a soup that’s traditionally eaten to break fast during Ramadan. To tell the truth, whenever I’ve eaten this soup in Morocco I’ve been struck by how bland it is. My version is reminiscent of the souk: of slow-cooked lamb tagines and vendors pedalling spices everywhere you turn.
200g lamb neck, diced into small bite-sized pieces, about 1.5cm
2 tsp cumin seeds, half ground with a pestle and mortar or blender
1 tbsp olive oil
1 small red onion, finely diced
1 celery stick, finely diced (leaves reserved for garnish)
1 carrot, finely diced
3cm root ginger, sliced into matchsticks
2 garlic cloves, sliced
1 tsp turmeric
1 tsp sweet paprika
1 tsp ground cinnamon
1 tbsp tomato purée
30ml red wine
1 bay leaf
½ can chopped tomatoes (200g)
40g green lentils, rinsed
