● 5 1/2 cups chicken stock ( heated)
● 1 1/2 cups Arborio rice
● 1/2 cup dry white wine
● 1 large chopped onion
● 4 garlic cloves, crushed
● 1 cup of grated parmesan cheese
● 1/4 cup cream (optional)
● 2 tablespoons of chopped fresh parsley
● oil
● salt & pepper
Directions
1. Heat oil in a large pot. Add mushrooms and chicken. Cook until cooked through. Transfer to a platter, keep warm.
2. In the same pot, melt butter. Sauté onions and garlic. Cook until leftover oil becomes translucent. Add rice and stir until rice turns opaque. That’s about 2 minutes of cooking time.
