World’s Fastest Re-Fried Beans

Serves: 4

Ingredients:

3 cans pinto beans

1 onion

1 tablespoon vegetable oil

1 teaspoon cumin

2 cups water

1 can diced tomatoes with green chili peppers

1 bunch parsley

Salt and pepper to taste

Directions:

Open and drain all the cans of beans, rinsing them under water before placing them in your pressure cooker.

Open and drain the can of tomatoes and add this in next, then combine all the rest of the ingredients. Chop the onion and add this next.

Seal the lid on top of the pressure cooker, then cook on high pressure for 10 minutes.

Release the pressure quickly, then use a potato masher to mash the beans. If they need more liquid, add a bit more water and continue to blend until smooth.

Serve with your favorite chips.
