¼ tsp. salt or to taste

1. Preheat the oven to 350 degrees.

2. Brush the potatoes with oil, wrap them in aluminum foil, and bake them for 25 to 30 minutes. Cool and cut in half horizontally. Scoop out the insides and mash, reserving the skin intact. Set aside the mashed potatoes.

3. In a saute pan, heat the oil. Add the onion and jalapeño peppers. Saute, stirring, for 2 minutes. Add the corn, chopped tomato, mashed potatoes, black pepper, and salt, and simmer for 3 to 4 minutes.

4. Fill the potato skins with the corn stuffing and bake in a gratin dish for 6 minutes. Serve hot.
