In a large bowl, whisk together the egg yolks and sugar.
Bring the cream and milk to a gentle simmer in a pan over a low heat.
Gradually pour the hot milk into the egg mixture, constantly whisking, until thoroughly combined.
Pour the whole mixture back into the saucepan. Continue stirring over a low heat until the custard has thickened.
Sieve the custard into a bowl. Leave to cool, then chill in the fridge for 30 minutes.
When the custard is thoroughly cold, stir in the lemon juice and vanilla essence. Pour it all into your ice cream maker. Churn and freeze according to the device's instructions. Add the peach chunks halfway through the churning process.
