Uncover the pot. Pour sautéed mushrooms with sauce across the surface of the rice. Then, place tofu and chard strips around the edges of the surface. Replace the pot lid and transfer to the oven to roast for 20 minutes. Remove from the oven and let the covered pot rest for 15 minutes.

Remove the cover, garnish with scallion greens, mash it all up, and dig in! (It’s okay for an eating duo to share the same pot!)

“Plov” Just Doesn’t Sound Good

Uzbek carrot pilaf sounds great!

Some years back, I narrowly escaped from a burgeoning revolution in Kyrgyzstan’s capital of Bishkek and hightailed it for the shores of beautiful Lake Issykkul. What a fantastic holiday. I hiked the rugged terrain surrounding the lake and found ancient glyphs, met generous local farmers, enjoyed early season cherries warm from the trees, and finally took a plunge in perhaps the coldest water in which I’ve ever swam. Fun fact: Issykkul means “hot lake.” It’s also the seventh deepest in the world. Creepy, black depths with great views of snowcapped mountains. Once I thawed, it was time for dinner.

This wasn’t just any dinner. A buddy of mine, an Issykkul local with whom I ran from Bishkek, had a favorite eatery owned by a rather large Uzbek gentleman named Akram. He fermented his own mead. Yes, the same mead from any Arthurian legend you’ve ever read. It was unexpected. But not as unexpected as what I learned next. This Russian-speaking mountain of a man was also renowned for being the best vegan cook at the lake! Plov, Uzbekistan’s national dish, is typically quite meaty, where lamb is the star. Akram’s vegan answer was a shockingly rich carrot and chickpea dance that was deeply satisfying.

When he served us, he also brought over some green peas and spooned some on top with the following life lesson: Everything is happier with peas. We should’ve brought some peas back to Bishkek.
