1 cup (200 g) crumbled feta or

panir

Caramelized Walnuts (recipe follows)

1. Remove the stems of the spinach and rinse well. The spinach leaves must be very, very dry for this recipe, or they will leave a watery broth in the pot. Pat them dry with paper towels within an inch of their lives. Tear into large pieces and dry again if necessary.

2. Heat the oil in a large wok or pot. Add the hing and saute over medium heat until fragrant, about 30 seconds. Add the spinach and toss for 30 to 60 seconds, until wilted.

3. Remove immediately to a bowl. Toss with the lemon juice and a sprinkling of salt and pepper. Arrange on plates and sprinkle with the crumbled cheese and Caramelized Walnuts.
