Vanilla has a pure, sweet and distinctly powerful aromatic flavour and a complex, flowery scent. The mellow, sweet taste and evocative fragrance of vanilla is unrivalled as a favourite ice cream flavouring, and it is commonly used to enhance the taste and appeal of many sweet foods and drinks, liqueurs, desserts, confectionery and chocolate. Indeed, vanilla is probably the strongest contender for the title of ‘world’s favourite flavour’.

The term ‘French vanilla’ refers to the French method of making creamy caramel desserts and ice creams from a vanilla-flavoured custard. It sometimes refers to a particularly buttery vanilla aroma.

Synthetically produced vanillin is much cheaper than the real thing and far more commonplace, now meeting the majority of the world’s demand. Artificial vanillin has a more heavy fragrance and a somewhat bitter aftertaste.
