MAKING THE MOST OF YOUR DAILY DOSE
For those of us used to powering down the chocolate, 1 ounce (about 28 grams) may not seem like much. But look at it this way: You hereby have permission to eat chocolate, guilt-free, every day! Of course—and wouldn’t you know it—that license comes with some restrictions. The chocolate must be dark (with a minimum of 60 percent cocoa content) and free of hydrogenated or partially hydrogenated fats, and you can’t drink it with milk, which seems to nix dark chocolate’s antioxidant value to the body. Some days, you might want to down your dose in the form of cocoa nibs (see What Are Cocoa Nibs?, page 35), which blend beautifully, for example, into dairy-free fruit smoothies. And by all means, try ultra-healthful products such as CocoaVia from Mars, Inc., and Acticoa from Barry Callebaut, which are specially processed to maintain maximum amounts of the flavanols and other super-nutrients in dark chocolate.
