HUMMUS

As of fairly recently, it’s possible to buy prepared Hummus in many supermarkets. I look upon this as a pretty exciting development in the world of food — but I’d still rather make my own, since I can season it just the way I like.

1 cup dried chickpeas (also known as garbanzos)

Water

¼ cup lemon juice

1½ teaspoons minced garlic (about 3 cloves)

½ cup tahini (sesame paste — available in most supermarkets) Salt to taste

1. Soak the chickpeas overnight in water to cover by at least 1 inch.

2. Drain. Cover amply again with fresh water. Boil for about 1 hour, or until very soft. Drain again.

3. Put the chickpeas, along with the lemon juice, garlic, tahini, and salt, in a food processor or blender and run the machine until the Hummus is smooth. (You may have to add a little water, a tablespoon at a time, to make the mixture thin enough to process. The texture you want is similar to mayonnaise.)

4. Serve as a spread or dip for triangles of pita bread, or pita chips.
