Pre-heat oven to 400°F.
Cook quinoa as directed on the package and then place in the fridge to cool for 20 minutes.
Wash red peppers and place whole in the oven for 20 minutes, turning every 5 minutes until the skin is dark in color. Remove from the oven, cover with paper towel and let sit for 10 minutes. Peel the roasted pepper, discard the seeds, and dice.
Meanwhile, whisk together the olive oil, lime juice, cumin, salt, and pepper in a large bowl.
Add the cilantro, green onions, chia seeds, feta, roasted red pepper, and quinoa and toss until mixed. Makes 4 side salads
