Ladle a small amount of crêpe batter (about ⅛ to ¼ cup) into the skillet. Lift the skillet slightly, swirling to evenly coat it with a very thin layer of batter. If the batter does not coat the skillet evenly, add another spoonful or two of milk to the bowl of batter and stir well. When the crêpe is lightly browned, use an offset spatula or small kitchen spatula to pick up the edges and flip over the crêpe (use your hands to lift and turn it). Cook the second side until lightly browned, about another minute more. Continue working in this fashion, stacking cooked crêpes on a plate, until all the batter has been used.
