Instructions

1. Combine the water and milk in a medium saucepan, and bring to a boil (keep an eye on it, as the milk can boil over). Season generously with salt to taste, then whisk in the cornmeal. Bring the mixture back to a boil, whisking constantly. Continue whisking until slightly thickened.

2. Reduce the heat to low and cook, partially covered and stirring often with a silicone spatula, until the polenta is tender and thickened, 25 to 30 minutes. Stir in the butter and Parmigiano-Reggiano. Season generously with salt. Remove the pan from the heat and serve immediately, or drizzle the top with a touch of milk and cover until ready to serve, up to 1 hour (the milk will help prevent a skin from forming).
