Using a spreader knife or butter knife, evenly distribute the Orange Blossom Chocolate Hazelnut Spread on the toast. Sprinkle with the rose petals and Rose Salt.
FLORAL CHÃVRE + CHAMOMILE-SALTED CUCUMBER TEA SANDWICHES
I love using a spongy white bread for these tea sandwiches in particular. Itâs a great contrast to the crunchy cucumber and is a lovely backdrop on which to display the colorful petals in the floral chèvre. This recipe is a base for four small tea sandwiches made with two slices of bread, so make multiple batches according to the number of guests youâre expecting. Serve on pretty, tiered cake stands.
MAKES 4 SMALL TEA SANDWICHES
5 oz [140 g] chèvre
2 Tbsp fresh, edible flower petals, plus more for garnish (I like to use fresh lavender petals, rose geranium flowers, nasturtium, and small rose petals)
2 slices spongy white bread
12 very thinly cut peeled cucumber slices
â tsp Chamomile Salt (page 14)
Place about 1 oz [30 g] of the chèvre into a small mixing bowl. Sprinkle a pinch of the edible flowers on top. Add an additional 1 oz [30 g] of the chèvre and sprinkle with another pinch of the edible flowers. Continue this process until all of the chèvre and flower petals are in the mixing bowl. Place a small piece of plastic wrap on a clean counter or table. Using a rubber spatula, transfer the Floral Chèvre to the plastic wrap. Wrap and gently press the petals into the chèvre, forming a cylindrical shape. If not using immediately, store in the refrigerator and remove 30 minutes before use; it spreads best at room temperature.
Using a spreader knife or butter knife, spread 1½ Tbsp of the Floral Chèvre onto each slice of bread. Layer the slices of cucumber onto one of the pieces of bread and sprinkle with the Chamomile Salt. Gently press the two pieces of bread together to secure the cucumber slices. Using a sharp knife, slice off the crusts, then cut the sandwich into four equal pieces. Spread a little additional Floral Chèvre on the sides of the sandwiches and press some fresh petals into the sides for garnish. Serve the sandwiches on a platter.
Store any leftover Floral Chèvre, wrapped, in the refrigerator and use within a few days.
