We must have been exposed to something like this recipe along the way. These flavour combos, textures and tastes are lodged in my memory, and are very much Senegalese in style, with peanuts, spice, coconut and squash. After a little playing around in the kitchen, I arrived at the exact dish I had been holding in my head. It’s deeply satisfying.
