Wild Rice with Herbs

Cooking Time: 55–70 minutes

Makes 4 servings

1 cup dry wild rice

4 cups water

½ tsp. sea salt

2 Tbsp. butter

1 cup thinly sliced mushrooms

2 whole wild onions, minced

2 tsp. chopped fresh parsley (⅔ tsp. dried)

2 tsp. chopped fresh sage (⅔ tsp. dried)

2 tsp. chopped fresh basil (⅔ tsp. dried)

2 tsp. chopped fresh marjoram (⅔ tsp. dried)

2 tsp. chopped fresh thyme (⅔ tsp. dried)

½ cup diced tomatoes

salt to taste

pepper to taste

1. In large saucepan, combine rice and water. Bring to boil. Reduce heat to medium-low. Cover and cook until rice is tender and water is absorbed, about 45–60 minutes. Remove from heat and let sit 5 minutes.

2. Sauté mushrooms in butter over medium-low heat until tender. Stir in onions, herbs, tomatoes, salt, and pepper. Continue cooking for 3–5 minutes. Remove from heat.

3. Pour over rice and mix well. Serve hot.
