Crisp, savory crackers are delightful alongside a steamy bowl of soup. Spread saltines with softened butter and sprinkle with Italian seasoning and garlic powder. Bake at 350 degrees for just a few minutes, until golden.

Cheesy Chicken Chowder

I have served this chowder often to company and they always request the recipe.

2 14-1/2 oz. cans chicken broth

2 c. potatoes, peeled and diced

1 c. carrots, peeled and sliced

1 c. onion, diced

1 t. pepper

1/4 c. butter

1/3 c. all-purpose flour

2 c. milk

2 c. pasteurized process cheese spread, cubed

2 c. cooked chicken, diced

Combine broth, vegetables and pepper in a large saucepan. Bring to a boil over medium heat. Reduce heat; cover and simmer for 15 minutes, until vegetables are tender. In a separate saucepan, melt butter over medium heat; add flour and mix well. Stir in milk; cook and stir until thickened. Add cheese and stir until melted; stir cheese mixture into soup. Stir in chicken; heat through. Serves 6.
