Here’s a tuna melt for wowing grown-up friends and hearty appetites. With its garlicky homemade aïoli and the mild and nutty fontina cheese, it’s vividly and immediately satisfying. Choose the open-faced English muffin version for knife and fork occasions, or go for the gusto with the variation that follows. Made with easy-to-hold bread and crispy bacon, this scrumptious fried sandwich will make your day. + Okay, nobody’s looking—if you’re in a hurry, doctor your favorite purchased mayonnaise with the garlic and capers. Sometimes a craving needs to be satisfied.
1 can (6 ounces) water- or oil-packed tuna, well drained
1 medium garlic clove, pressed (½ teaspoon)
1 teaspoon capers, drained, rinsed, and coarsely chopped
4 to 6 tablespoons aïoli, divided
coarse salt, preferably kosher, and freshly ground pepper
2 split and partially toasted english muffins
4 ounces fontina cheese, grated (about 1 cup)
Preheat the broiler.
In a small bowl, flake the tuna. Add the garlic and capers and mix until blended. Add 4 tablespoons of aïoli and mix until combined. Season to taste with the salt and pepper, adding the remaining 2 tablespoons of aïoli to taste.
Divide the tuna mixture among the 4 muffin slices. Place the muffins on a broiler pan. Divide and sprinkle the grated cheese over the tuna. Broil until the cheese melts and begins to bubble, 2 to 4 minutes. Watch carefully; browning time will vary depending on the thickness of the sandwich and its distance from the broiler.
VARIATION:
For the ultimate AÏOLI BACON TUNA MELT, substitute 4 slices good-quality white bread for the split English muffins. Arrange the bread slices in pairs, and sprinkle some of the cheese on each slice. Next, arrange 1 or 2 slices of your favorite crisply cooked smoked bacon on 2 of the slices and cover with the tuna mixture. Gently invert the opposite bread slices and press together. In a skillet over medium heat, melt 1 tablespoon butter. Add the sandwiches and cook until lightly toasted on the bottom. Flip, adding more butter if necessary, and cook until the cheese has melted and the bread is lightly toasted. Enjoy!
