Salsa Fresca
This is best if it sits for a couple of hours; but once you add the salt, it should be no more than 4 hours, as it may become watery.
4 cups seeded and diced tomatoes
1 cup minced red onion
1 cup chopped fresh cilantro
1/4 cup lime juice
2 teaspoons sea salt
Mix all ingredients in a large bowl. Yield 1-1/2 quarts
Mango Guacamole
I have never met someone who didn’t love guacamole. I personally love it—there is a Mexican restaurant in Manhattan’s East Village that I go to specifically for their many variations.
7 avocados
2 teaspoons sea salt
2 cups chopped cilantro
3 seeded jalapeños, chopped
2 tablespoons lime juice
2 mangoes, finely chopped
Place all ingredients except mango in food processor. Pulse until well combined but not too smooth. Remove to a bowl and stir in the mango. Cover with plastic wrap pressed against the surface of the guacamole to prevent oxidizing. Store in refrigerator. Yield 1 quart
