Moringa Teff Lasagne
The selection of pasta in Addis Ababa supermarkets is the largest of any product, probably due to our history with Italy in the 1930s. This modern take on lasagna uses moringa, a nutritious herb. In the south of Ethiopia, moringa is best known as sheferawu or haleko and used as a natural medicine in fosesse, a traditional taboulé-like recipe with freshly chopped moringa. In Europe it is mostly dried as green tea and herbal medicine. As that tends to be bitter, substitute fresh tender spinach leaves here instead. The dish reduces the amount of gluten by blending wheat flour with the flour of teff.
