3 egg whites

1/4 c. milk

2 tbsp. olive oil

1 medium white onion, chopped

2 tbsp. sun dried tomatoes in oil, drained and chopped

2 tbsp. parmesan cheese, grated

2 tbsp. fresh basil, chopped

4 wholegrain or multigrain bread slices (about 30 g each), toasted

Salt and freshly ground black pepper

Fresh basil, for garnish

Directions:

1. Whisk the eggs and stir in milk in a medium bowl.

2. Heat oil in a large non-stick pan or skillet over medium flame. Stir-fry onion and sun-dried tomatoes for 2-3 minutes.

3. Pour the egg mixture, basil, and parmesan; cook, stirring for 2-3 minutes.

4. Spoon about 3 tbsp. of egg mixture on top of each toast and garnish with fresh basil.

5. Serve and enjoy!
