Grate carrot, cabbage and onion then toss with remaining ingredients. Add salt and pepper to taste.
We use hemp seeds as they add a lovely crunch to this dish, but you could use pine nuts, sesame seeds, or walnuts.

EAT YOUR GREENS
When I wrote the original edition of this book, this was one of my favourite recipes in it; I used to make it all the time. It comes out quite differently, depending on which greens you use. Spinach and lettuce are quite runny, kale is quite chewy. Experiment with different combinations to see which you like best.
100-200 g/3-7 oz green leafy vegetables
½ avocado
2 gherkins (or 2 tbsp sauerkraut)
1 tbsp dulse
1 tsp kelp powder
